Aflatoxin is grouped in a class of toxic compounds that are produced by certain molds found in food, and can cause liver damage and cancer.

Aflatoxin is a carcinogen and toxic substance produced by mold, that can infect food when it is stored in unsanitary conditions. The microscopic fungi that produce aflatoxins grow on hazel, wheat, corn, beans, rice crops.

WASHINGTON, Aug. 31, 2020 – Ukrop’s Homestyle Foods, a Richmond, Va. establishment, is recalling approximately 1,202 pounds of ready-to-eat (RTE) chicken salad product due to misbranding and an undeclared allergen, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced today. The product may contain almonds, a known allergen, which are not declared on the product label.

The RTE chicken salad item was produced on August 26, 2020. The following product is subject to recall: 

  • 15-oz. round plastic containers containing “Ukrop’s Chicken Salad” with a sell by date of “09/02/20”.

The product subject to recall bears establishment number “P-19979” inside the USDA mark of inspection. These items were shipped to retail locations in North Carolina, Ohio, Virginia, and West Virginia.

The FDA DA Announces Temporary Flexibility Policy Regarding Certain Labeling Requirements for Foods for Humans During COVID-19 Pandemic.

What this means is that food manufactures are able to alter the ingredients without making changes to the ingredient list. With this policy in place many unkown allergens are making people sick, however they dont know what the allergen is due to this policy.

  • Safety: the ingredient being substituted for the labeled ingredient does not cause any adverse health effect (including food allergens, gluten, sulfites, or other foods known to cause sensitivities in some people, for example, glutamates);   
  • Quantity: generally present at 2 percentsor less by weight of the finished food;
  • Prominence: the ingredient being omitted or substituted for the labeled ingredient is not a major ingredient in the product;
  • Characterizing Ingredient: the ingredient being omitted or substituted for the labeled ingredient is not a characterizing ingredient; for example, omitting raisins, a characterizing ingredient in raisin bread; 
  • Claims: an omission or substitution of the ingredient does not affect any voluntary nutrient content or health claims on the label;  and
  • Nutrition/Function: an omission or substitution of the labeled ingredient does not have a significant impact on the finished product, including nutritional differences or functionality.
